這廚師作菜要有食材,刀具,鍋具,熱源,調料,食譜等等!有了這些後就看各人的主觀意念來作菜!同樣的兩位米其林大廚,用完全一樣的食材,設備調料等等,會作出很不一樣口味的同樣菜色!這就是藝術的境界!藝術之為藝術,其定義的第一點就是&quot;不可複製性與唯一性!如果兩位大廚作出完全一樣的菜色,那他們作的菜就缺乏個人的主觀性與藝術性,也就是只有技術沒有藝術的菜色了!

風景攝影也是相同,最好的大片幅機,鏡頭,底片,同樣的場景,同樣的光線條件,同樣俯仰移軸技術,兩位大師在一起拍,卻會拍出完全不同的東西來!就算是同樣的取景構圖,兩人也可能以不同的曝光方式來拍!其目的就在&quot;創作性&quot;!舉例來說,參加攝影旅行團,到了地頭,大家拿出機絲來打上幾張後,回到集合點,大家把片子一起放在桌上(電腦桌面),經常會發現大家拍的都差不多,你很有可能找不到哪幾張是你拍的,原因就在缺乏主觀的個性化,只想到如何把器材用好,如何記錄下眼中看的場景,而不是心中看到的場景!

我認為把一款生豆處理完成到能喝好喝的咖啡,中間許多的步驟與過程都能加入咖啡師本身的主觀個性化!如果全程想的只是技術上的零失誤,且也完成了,那這杯咖啡就是一杯好喝且沒問題的咖啡,但也僅僅是一杯好喝沒問題的咖啡罷了!這杯咖啡的可複製性一定非常高,因為裡面只充滿了技術,但少了主觀的個性化,這也就少了藝術性了!說不定,像我這個用土砲不到四個月的菜鳥買個30Kg的葉門瑪達利來練習,也許有一天也能達到作出技術沒問題的好喝咖啡!

我現在不管烘甚麼都總是會想把豆子在一爆前的脫水過程拉長,進入一爆後再持溫烘個六七分鐘,不讓豆子進二爆,關火後再持溫滑到溫度要下降了才下鍋!我就是不喜歡酸味,可是我又喜歡把豆子轉糖化/焦糖化過程中讓果酸味轉成各種甜味,然後作出來的咖啡就在入口時的一剎那甜味與苦味就覆蓋了那一絲難以察覺的酸味的口感!有趣的是,藍山No.1, Kona extra fancy, BIWA黃曼,依肯達,日晒或水喜耶加,葉門瑪達利,Toraja都能進行這樣的過程,只是各種咖啡豆特性不同,濃甜苦回甘各不同!最後手沖時磨的略粗一點,水溫略低一點(80度),豆量多一點,沖2/3杯就拋棄,再加熱水到咖啡裡調濃淡,這樣咖啡因也少了一點!我猜,很多人一定認為我真是又外行又暴殄天物,但是,這就是現在當下的 My Coffee!!!
